When you eat healthy, you feel healthy. There are so many delicious recipes you can make that are packed with color and flavor. Try this warm roasted vegetable quinoa dish for lunch or dinner. You won't be disappointed!
Recipe: -Cook quinoa in 1/2 water 1/2 organic vegetable broth and season with your favorite spices (I like 21 Season Salute, pink salt, ground pepper) -Chop up a variety of veggies and toss in a bowl with a little EVOO, rosemary, thyme, pink salt and ground pepper and bake at 425° for about 25-30 min (I did sweet potato, red onion, and yellow carrots) -Top with a table spoon of feta cheese
